Ingredients:

1 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, crushed

500g ripe tomatoes, chopped (or 1 tin chopped tomatoes)

400ml vegetable stock

100ml double cream (plus extra for drizzling)

Salt & pepper to taste

Method:

Heat the oil in a saucepan over medium heat. Add onion and garlic, cook until softened.

Stir in the tomatoes and tomato purée. Cook for 5–10 minutes until the tomatoes break down.
