Creamy Tomato Soup with Munchie’s Crunchies

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, finely chopped

  • 2 garlic cloves, crushed

  • 500g ripe tomatoes, chopped (or 1 tin chopped tomatoes)

  • 1 tbsp tomato purée

  • 400ml vegetable stock

  • 100ml double cream (plus extra for drizzling)

  • Salt & pepper to taste

  • Fresh basil leaves, for garnish

Method:

  1. Heat the oil in a saucepan over medium heat. Add onion and garlic, cook until softened.

  2. Stir in the tomatoes and tomato purée. Cook for 5–10 minutes until the tomatoes break down.

  3. Pour in the vegetable stock and simmer for 15 minutes.

  4. Use a hand blender to blend until smooth. Stir in the cream, and season with salt and pepper.

  5. Ladle into bowls, drizzle with extra cream, and top with Munchie’s Crunchies for that cheesy crunch.

  6. Garnish with torn basil leaves and serve immediately.
